From Italy With Gusto

A group of Fanshawe College Culinary Management students and instructor Melanie Doerksen traveled to Italy last summer to study Italian cooking returning to the College with recipes for some tasty Italian dishes.
Here students work on part of a trio plate (inset) that will ultimately include toasted bread with creamy salted cod and pesto made with arugula, roasted tuna with sweet peppers and pineapple and deep-friend sardines. A similar trip is planned for the summer of 2009.
